Ball Cock
This restricts or allows water flow dependant on how much water is in the tank. More water in the tank means less water is allowed in, whereas less water in the tank means more is allowed in. These are normally found in toilet cisterns and cold water tanks, and are often coupled with an overflow pipe in the event the ball cock valve fails.
